I love freezing red peppers for Winter! I use them in meatloaf, sloppy joes, chili, omelets, vegetable soup, stir fry, etc…
Now you can see why I freeze so many!
Here are some tips…
* I use my Rada tomato knife… it’s sharp and easy to handle.
* I dice them, spread them on a cookie sheet lined with waxed paper, freeze, and then put them in quart freezer bag.
* I use my wide mouth funnel to make scooping them in the bag easier.
The price of red peppers in the store is ridiculous! It’s so much cheaper to grow your own and freeze!
