Make ahead and freeze ideas

Hamburger

Fry several pounds of hamburger with onion, red pepper, garlic etc…. or whatever you like for flavoring. Freeze in individual ziplock baggies. Use for:

*chili
*spaghetti
*goulash
*Mexican – burritos, tacos, nachos, etc…

Roast

Put a big roast in large stock pot. Add onion, carrots, celery, garlic, salt, pepper. Cover with water. Bring to boil, reduce to simmer. Simmer about 2 hours or longer… until meat is falling apart. Remove as much meat and veggies as you can, then strain the stock. Shred the beef in individual freezer bags. Use for:

*Vegetable soup
*Beef and noodles
*Bar-b-q sandwiches
*Mexican – burritos, tacos, nachos, etc…

*Use the beef stock to boil noodles or
as base for vegetable soup

Chicken

Put whole chicken in large stock pot. Add onion, carrots, celery, garlic, salt, pepper. Cover with water. Bring to boil, reduce to simmer. Simmer about an hour or longer … until meat is falling off the bone. Remove as much meat and veggies as you can, then strain the stock. Shred the chicken in individual freezer bags. Use in:

*chicken and noodles
*Bar-b-q sandwiches
*Mexican – burritos, tacos, nachos, etc….

*Use chicken stock to boil noodles in
*Use for “sick soup” ~ add extra garlic and sip on if you have a head cold

Meat Loaf

It’s just as easy to make 2 – 3 meat loafs at one time. Simply freeze the others!

Make a huge pot of chili
freeze in individual freezer bags.

* 5 way chili – add spaghetti, cheese, onion,
* use over hot dogs
* use for taco salads

Make a big pot of soup beans

mash leftover beans and add garlic to taste

*Mexican- bean and cheese dip, on burritos, tacos, etc…

Tips for freezing

*date and label all bags! Trust me… you won’t remember what it is in a month!

*put individual freezer bags flat on cookie sheet and freeze

*put frozen bags standing up in labeled basket for easy storage
