Christmas Eve Bag for Mom!

I decided to make Mom a Christmas Eve Gift Bag like I made for the Grandkids! There’s hot chocolate, popcorn, peanuts, candy cane and a movie. I put bright orange socks in the bag with a note… “wear these at night in case you wonder out…. so we can find you!”

*my kind of humor*

Salted Caramel Thumbprints

This is a Simple Sugar Cookie dough that can be used to make 3 different types of cookies.

I chose the Salted Caramel Thumbprints..These cookies are delicious. I got the recipe from Dash… a little insert in our paper.

Bake 375 20 min
Makes about 3 doz.

3 C flour
3/4 tsp baking powder
1/4 salt
2 1/2 sticks unsalted butter
1 1/2 C sugar
1 large egg, beaten
1 Tbs milk
1 tsp vanilla

Cream butter and sugar together until light and fluffy. Add egg, milk and vanilla.

Combine flour, baking powder, and salt in large bowl.

Slowly beat dry ingredients into wet on low speed, increasing speed until dough comes together

Wrap dough in plastic wrap and refrigerate for at least an hour.

That’s the Simple Sugar Cookie dough recipe.

To make the Salted Caramel Thumbprints you need to add:

egg white, beaten
chopped peanuts
chopped pretzels
chewy caramel candies

Roll chilled dough into 1 inch balls. Roll each ball in beaten egg white, then in finely chopped peanuts and pretzels. Transfer to parchment_lined baking sheets, 2″ apart. Make an indentation in center of each cookie with your thumb. Cut chewy caramel candies in half, put one half on each cookie. Bake 20 min or until just brown around the edges.

These are great for dunking!

Fried Green Tomatoes in the Winter….

This is why I can green tomatoes. It’s 14 degrees out and we had fried green tomatoes for supper tonight!

They are really easy to make. If you’ve never canned before, these are about as easy as you get.

Here are the basic canning instructions. Please refer to the website (my “go to” site for tips on preserving food) for more info on sterilizing, proper filling of jars, etc… if you need to.

Wash some nice firm green tomatoes
Slice 1/2″ thick, filling jar to 1/2″ of rim
Add 1/2 tsp canning salt
Add cold water to 1/2″ of rim
Boil in hot water bath for 10 min.

*Use wide mouth pint jars
*Make sure the sliced tomatoes will fit in one piece in the jar. It’s better to have one whole slice than to cut them to fit. See the picture…
*Make sure you slice them at least 1/2 thick. That way, they hold up to the canning process and won’t turn all mushy. Trust me, I know.
*Drain them and just pat excess liquid… you don’t have to dredge them in egg or anything… just coat with corn meal and a little salt.
*Fry in an iron skillet … somehow everything tastes so much better in an iron skillet!
*We put them on hamburgers one night and they were great!

Making a Ho Hum Hat Adorable!

My niece Marina and I are proud Thrift Store Junkies and Tightwads! We find the coolest stuff for each other. When I spotted this hat …. it just screamed Marina!

I found this plain wool hat at Goodwill for $2.49 …. I hand washed it ( yes, you CAN wash 100% wool by hand and lay flat to dry ) … then I simply used hot glue to attach an extra “penny” I had left over from a previous project. How easy!

Marina will love this!

Bieber going bye-bye?

I must have been really bored …. I couldn’t resist reading the article after seeing this headline about the little Bieber!

In an interview he alluded that he might retire from singing (yes, that’s what he thinks he does) for a while because “I wanna get to know my family more” and I want to focus on “figuring out myself as a man”.

OMG…. really? Hey Biebs, the first thing you need to do is “figure out how to BE a man!” Here are some tips:

What REAL men don’t do…

* Pee in a bucket in public
* Yell “F*ck you” at a photo of an ex President
* Own a monkey
* Have two bodyguards carry them up the Great Wall of China
* Have a fan base of 12 year olds
* Sign the guest book at Anne Franks Museum “Truly inspiring to be able to come here. Anne was a great girl. Hopefully she would have been a Belieber.” (No. I did not make that up.)
* Basically, anything you do!

I saw this funny post on Facebook:

~~ Dear Justin Bieber haters,

I owe my life to Justin. On March 9, 2009 I was in a coma for 6 months after a terrible car crash. One day my nurse came into my room, turned on the radio and a JB song was playing. So I got up and turned the radio off. ~~

Hahahaha! Good Riddance Biebs!!
