This is a Simple Sugar Cookie dough that can be used to make 3 different types of cookies.
I chose the Salted Caramel Thumbprints..These cookies are delicious. I got the recipe from Dash… a little insert in our paper.
Bake 375 20 min
Makes about 3 doz.
3 C flour
3/4 tsp baking powder
2 1/2 sticks unsalted butter
1 1/2 C sugar
1 large egg, beaten
1 Tbs milk
1 tsp vanilla
Cream butter and sugar together until light and fluffy. Add egg, milk and vanilla.
Combine flour, baking powder, and salt in large bowl.
Slowly beat dry ingredients into wet on low speed, increasing speed until dough comes together
Wrap dough in plastic wrap and refrigerate for at least an hour.
That’s the Simple Sugar Cookie dough recipe.
To make the Salted Caramel Thumbprints you need to add:
egg white, beaten
chewy caramel candies
Roll chilled dough into 1 inch balls. Roll each ball in beaten egg white, then in finely chopped peanuts and pretzels. Transfer to parchment_lined baking sheets, 2″ apart. Make an indentation in center of each cookie with your thumb. Cut chewy caramel candies in half, put one half on each cookie. Bake 20 min or until just brown around the edges.
These are great for dunking!
This is why I can green tomatoes. It’s 14 degrees out and we had fried green tomatoes for supper tonight!
They are really easy to make. If you’ve never canned before, these are about as easy as you get.
Here are the basic canning instructions. Please refer to the website pickyourown.org (my “go to” site for tips on preserving food) for more info on sterilizing, proper filling of jars, etc… if you need to.
Wash some nice firm green tomatoes
Slice 1/2″ thick, filling jar to 1/2″ of rim
Add 1/2 tsp canning salt
Add cold water to 1/2″ of rim
Boil in hot water bath for 10 min.
*Use wide mouth pint jars
*Make sure the sliced tomatoes will fit in one piece in the jar. It’s better to have one whole slice than to cut them to fit. See the picture…
*Make sure you slice them at least 1/2 thick. That way, they hold up to the canning process and won’t turn all mushy. Trust me, I know.
*Drain them and just pat excess liquid… you don’t have to dredge them in egg or anything… just coat with corn meal and a little salt.
*Fry in an iron skillet … somehow everything tastes so much better in an iron skillet!
*We put them on hamburgers one night and they were great!

I found this plain wool hat at Goodwill for $2.49 …. I hand washed it ( yes, you CAN wash 100% wool by hand and lay flat to dry ) … then I simply used hot glue to attach an extra “penny” I had left over from a previous project. How easy!
