Quick microwave mashed potatoes

I wanted a quick batch of mashed potatoes but didn’t want to wait for the water to boil and the potatoes to cook. I knew if I Googled microwave mashed potatoes, I’d find a recipe. Sure enough… I did!

Here it is..

Wash potatoes and peel if desired. Place the whole potatoes into a microwave-safe dish. Cover dish (if covering the dish with plastic wrap, poke a small hole in the plastic).

Place potatoes in the microwave. Microwave on HIGH for 8 minutes or until the potatoes are done. Using oven mitts, carefully remove dish from microwave. NOTE: Due to steam building up, use oven mitts or tongs to remove plastic wrap from the dish.

Place the cooked potatoes into a large bowl. Use a potato masher or potato ricer to mash potatoes until there are no lumps. Do not use your electric mixer..

Add milk, butter, salt, and pepper. Use your potato masher to continue mashing potatoes until you reach the desired consistency. Transfer to a serving bowl and serve.

Bacon Weave! … so easy to make!

Who doesn’t like BLT’s! “The more bacon ~ the better” is my motto. I’ve seen these bacon weaves posted a few times and finally decided to try them.

Weave your bacon on non-stick foil on a cookie sheet. I used three pieces that were cut in half. Put in a COLD oven … set to 400 …. close door and leave in for 17 – 25 min until done. (It all depends on how long it takes for your oven to warm up and how crispy you want your bacon.) Place on paper towel to drain. That’s it!

You can use these on *BLT’s, *Bacon Cheeseburgers, *Bacon, egg and cheese on toast…. Enjoy!

Betty Crocker’s Hershey’s Smores Cupcake review….

Are you kidding me? I couldn’t resist when I saw this Smores Cupcake mix the other day. These were a breeze to make… The directions are easy to follow and they turned out great! What a treat … there’s a graham cracker crust on the bottom and marshmallow filling in the middle of the dark chocolate cupcake. I added creamy milk chocolate icing and a few sprinkles for a little pizzaz… mmmmm….

Take it from me and try these for yourself …. Enjoy!

Easy Weeknight Fire….

The other night the house was a tad chilly… not really enough for the furnace or a full blown fire in the fireplace. So Greg decided to try burning just the starter log. Once it started, he cracked the door. We felt a nice warmth and had a pleasant “ambience” … The logs have a 4 hour burn time. Just enough for the evening …..

Easy way to de-string celery…

I like to de-string my celery because, well, I’m weird like that. But really …. because it makes it so much easier to eat.
Just take a good vegetable peeler ( my favorite is Rada ) and gently run it down the stalk a few times. You don’t have to get all OCD or anything (although I have been guilty of that). Try it and see for yourself, it really does make a difference.
